I ate lunch at a place called "Wagamama"yesterday. I had a tofu "firecracker"curry, which was fried tofu with a sweetish, spicy curry sauce, mangetouts, green peppers and onions. That might work well with a steamed bun.
What sort of flavours do you like? Hot and spicy, sweet & sour etc. Tofu needs to be diced finely for steamed buns. One of my 'local' vegan Vietnamese restaurants does steamed buns with a mushroom & tofu mix.
