blood orange
The blood orange is a variety of orange with crimson, almost blood-coloured flesh.
The blood orange is a variety of orange with crimson, almost blood-coloured flesh. The distinctive dark flesh colour is due to the presence of anthocyanins, a family of polyphenol pigments common to many flowers and fruit, but uncommon in citrus fruits. The flesh develops its characteristic maroon colour when the fruit develops with low temperatures during the night. Sometimes, dark colouring is seen on the exterior of the rind, as well, depending on the variety of blood orange. The skin can be tougher and harder to peel than that of other oranges. Blood oranges have a unique flavour compared to other oranges, being distinctly raspberry-like in addition to the usual citrus notes.
The blood orange is a natural mutation of the orange.

Ingredients:

This blood orange salad is seasoned with rosemary and Extra Virgin Olive Oil, it works perfect both as a starter or snack.

Having discovered a new spice there is no stopping me! Achiote has a beautiful subtle and fascinating flavour. It reminds me a little of Saffron not because it tastes similar but because it has such an unusual complex flavour. This is such a simple recipe that I can hardly believe it tastes so...
I'm on a bit of a blood orange binge! This is a very straightforward yet rather exotic recipe inspired by Middle Eastern ingredients and beautiful blood oranges, which (as I write) are in season. Sweet dates, salty olives, sharp caperberries and slightly bitter orange make this an adventure in...
A sweet, salty and sour salad. I've been experimenting with dates and with blood oranges and so I have rather a lot of both to use up. And then there was the avocado in the fridge which had reached its peak. Now it has to be said, that I am not a fan of avocados , so this is a labour of love...
