Blue corn describes several varieties of flint corn, used in traditional cooking in the American Southwest and Mexico.
Blue corn (also known as Hopi maize, Yoeme Blue, Tarahumara Maiz Azul, and Rio Grande Blue) an umbrella term for several varieties of flint corn grown in Mexico, and the southwestern and southeastern US. It is used in traditional Southwestern dishes of tortillas and cereal, and commercially in products such as blue corn chips and blue corn pancake mix.
