Buttermilk is a fermented dairy product. Traditionally, it was the liquid left behind after churning butter out of cultured cream. As most modern butter is not made with cultured cream but sweet cream, i.e. uncultured, most modern buttermilk is cultured. Buttermilk can be drunk straight, and it can also be used in cooking. In making soda bread, the acid in buttermilk reacts with the raising agent, sodium bicarbonate, to produce carbon dioxide which acts as the leavening agent. Buttermilk is also used in marination, especially of chicken and pork.
Here's something you'd never dream of. A hot sauce - made with milk! Traditionally it's made with the buds of the maguey, or agave succulent. I doubt they'll be available in other places so I'm not including them in the recipe:
Ingredients:
1/2 lt fresh milk
200 mls buttermilk
150 gms hot...
Beignets are an essential thing to try when you visit New Orleans. It’s been several years, but it’s great to be able to recreate that magic. You can absolutely make the beignets with water instead of buttermilk, but this adds an extra bit of awesome.
By the way, I used white chocolate chips...
I love fresh summer herbs, and tarragon is one of my favorites. I made some buns to use for sandwiches and burgers and I added fresh tarragon and thyme to the dough, which gave them a delicate and delightful layer of flavor. They were moist and fluffy inside but hefty enough to hold up the...

Buttermilk gives a lovely light tang to this mild aromatic curry. If you want to make a spicier dish simply add some hot chilli powder, to taste. I used Kashmiri chilli powder which is very mild. The toasted spice mix makes twice as much as is required but will keep well in a screw top jar for...
Recently, I picked up a small waffle maker for $10 at my local household supply Big Box. Actually, this was last spring. I hadn’t used it until now. At first I thought that I could use a pancake recipe for waffles, but apparently not; apparently the best waffles follow a different format...
These buttermilk buns are soft and fluffy inside, but have a study enough crust and heft to hold up under a massive amount of sandwich ingredients or a thick, juicy burger with all the fixings! I used bread flour in this recipe, but I have used AP flour in the past and it works just fine.

This is a very easy tray bake yet it looks rather dramatic. You could substitute chicken pieces for the poussin. Sumac has a citrus edge which works well with the sweetness of pistachio and the nutty toasted sesame oil. Garlic cloves are baked unpeeled and whole, to squeeze out when the dish is...
