Carob is an evergreen plant, native to the Mediterranean region and Middle East, cultivated in part for it's edible pods, processed into chips, powder, and syrup forms. The powder and chips can be used like chocolate in almost all recipes. Unlike cocoa beans, carob pods are somewhat sweet, not bitter, and do not contain caffeine.
