halloumi/haloumi
Halloumi (Greek: χαλλούμι) or hellim (Turkish) is a semi-hard, unripened, brined cheese made from a mixture of goat's and sheep's milk, and sometimes also cow's milk. It has a high melting point and so can easily be fried or grilled. Rennet is used to curdle the milk in halloumi production, although no acid-producing bacteria are used in its preparation.
Halloumi is popular throughout the region broadly known as the Levant. Demand in the United Kingdom had surpassed every other European country, except Cyprus, by 2013.

Halloumi is very straightforward to make at home. Traditionally it is made with sheep’s milk but I used full fat cow’s milk instead. Here I used it grilled in a salad with crispy bacon, fried egg with tarragon and a harissa/yoghurt dressing.

Hello, first time posting.
Does anyone know where to get really rock hard haloumi, the type to make Turkish cheese bread with.
Can only ever find the soft rubbery one. Looked online and at turkish food stores?
Haloumi cheese has a wonderful creamy taste yet it stands up to grilling and holds its shape. It will absorb marinades really well and here I've used tamarind sauce, which adds a sweet and sour dimension. If you can't obtain tamarind sauce, I've suggested a substitute below.
