hominy
Hominy is a food produced from dried maize (corn) kernels that have been treated with an alkali, in a process called nixtamalization (nextamalli is the Nahuatl word for "hominy"). "Lye hominy" is a type of hominy made with lye.
This is an Ecuadorian dish typically made to celebrate Carnival. It is best eaten at least several hours after being made, then reheated. I made it early in the day, then reheated while I cooked the flatbread. It was great, a definite make again. Craig almost licked the pot.

I had used part of a Jimmy Dean's chub of original breakfast sausage so scaled down the original recipe for that and also because there are only 2 of us and I didn't want more than 1 more breakfast leftover. So, the amounts in parentheses are for 2 for 2 breakfasts, and I baked in a 9x7 pyrex...
My very lovely American friend sent me a food parcel not so long ago. Amongst other things, were two tins of hominy (one white, one yellow).
What can I cook/make with them? In the UK we don't have hominy and I've yet to taste it. So, all suggestions welcome.
