vinegar

Vinegar is an aqueous solution of acetic acid and trace chemicals that may include flavorings. Vinegar typically contains 5–20% acetic acid by volume. Usually the acetic acid is produced by the fermentation of ethanol or sugars by acetic acid bacteria. There are many types of vinegar, depending upon the source materials. Vinegar is now mainly used in the culinary arts: as a flavorful, acidic cooking ingredient, or in pickling.
As the most easily manufactured mild acid, it has historically had a wide variety of industrial and domestic uses (such as its use as a household cleaner).

Recipe Apple or Pear Cider Vinegar

It's a pretty simple process to make any fruit cider vinegar, though really there isn't a set recipe. It's more a concept than a recipe: make cider, add mother and turn the alcohol into vinegar. You can make it with any fruit, including making it using just the scraps, skins and core, rather...

    Recipe Pistachio Dill Chimichurri

Chimichurri is the South American cousin of pesto. I’m sure you can see the family resemblance. As with its Italian cousin, there are different ways to make a chimichurri. One distinguishing characteristic is the presence of vinegar. Mint isn’t always in chimichurri, but it’s mandatory when I...

    Malt Vinegar Usage

I noticed malt vinegar in the hypermarket today. It may have been on sale for years in Finland but I've never used it (just balsamicos, white vinegar and apple wine/cider vinegar). This was the first time it caught my eye. It's strange that malt vinegar is not used commonly here although we have...

    Recipe Pork Cassoulet

Pork Cassoulet is a French classic dish. There are many many versions out there and I make no claim to authenticity. This recipe is simple to make and the vinegar adds a good counterpoint to the rich meat. Use the best sausages you can find. Serve with crusty French bread to mop up the gravy...

Recipe Low Sodium Pork Fried Rice

I just made this, but I used tilapia instead of the pork (because I didn't feel like trimming down the pork shoulder I had, and because I had tilapia handy). This made for a lighter dish, but it should be noted that this is actually not as bad for you as the standard fried rice you might get...

Well now, this is a shock. I can't believe I've been on this board for nearly 4 months, and I didn't post a kimchi recipe. Recipe Curried Pickled Red Onions

This was a happy accident. I have pickled red onions on-hand at any given time, but I generally like to deviate from the standard onion-vinegar-sugar-salt format each time. Recipe Mango Pomegranate Chutney

Just about any fruits can be put into a chutney. Mango is fairly standard, but I really had a revelation when I decided to try pomegranate. The bitterness of the seeds plays well with the other elements of the chutney, and makes good foil to the sweetness of the mango. The color of this chutney...
