Ingredients:
1 1/2 lbs potatoes, peeled, washed and dried, and cut into 1 inch pieces
1 1/2 oz clarified butter + a little more
1 teaspoon turmeric
1 large bay leaf
1/2 teaspoon salt
1/2 teaspoon onion salt
1/2 teaspoon chilli powder
2-3 teaspoons garam masala
1/2 teaspoon ground black pepper
Method:
- Heat the 1 1/2 oz butter in a large frying pan, and put in the potatoes with the turmeric and bay leaf.
- Stir and fry over a medium heat for 5 minutes.
- Season with salt, onion salt and chilli powder. Fry again for another 5 minutes and dust with the garam masala. Add a little more butter and stir.
- Cover the potatoes and leave for a few minutes over a very low heat. Shake the frying pan three or four times during this period. The potatoes should now be done.
- Uncover and let them crisp until the garam masala has formed a crusty coating. Add freshly ground black pepper and serve.
