This was dinner last night. First had it 3 years ago. My notes say DH couldn't stop talking about how much he enjoyed it. Sorry it took this long to get back to it.
Apple Chicken Sausage Kebobs
serves 4 to 6
Apple Marinade and Sauce
1 cup apple cider or juice
1/2 medium onion, chopped
1/4 cup olive oil
2 TB. cider vinegar
2 TB. brown mustard
4 tsp. minced fresh sage or 2 tsp. crumbled dried sage
1 TB. minced fresh thyme or 1 1/2 tsp. dried thyme
1 TB. Dijon mustard
1/2 tsp. salt
1 lb. boneless, skinless chicken breasts, cut in 3/4 to 1" cubes
Metal skewers
8 oz. fully cooked chicken-apple sausage, or other mildly seasoned fully cooked poultry sausage, sliced into 1" chunks
4 green onions, cut into 1" pieces
1 red Delicious apple, cut into bite size chunks, with skin on
Make marinade, add chicken, marinate in frig. 1 1/2 to 8 hours
Drain marinade into a small saucepan and save
Thread chicken, sausage, green onion and apple onto skewers. Let sit 15 min.
Start grill, medium temp.
Boil marinade until reduced by 1/4.
Grill kabobs 8 to 10 minutes, turning to cook on all sides. Brush with sauce last few minutes. Serve extra sauce on side.
