Recipe Apple Vinaigrette

Apple Vinaigrette
Makes about 2 cups

Ingredients
5 oz fresh apple (approx 1 medium apple), peeled, cored, and cut into chunks
2 oz shallot (approx 1 medium shallot), roughly chopped
1 1/2 TB brown sugar
1 TB Dijon mustard
1/4 cup white wine vinegar
2 TB apple juice (I used cranberry juice and it was fine)
3/4 cup olive oil
1 TB lemon juice
Dash of salt

Directions
Put everything in the jar of a blender (or the container of a stick blender) and process until smooth. That’s it.

TastyReuben did you run this through a sieve at all? this sounds yummy!
I meant to stop by the house that was giving away apples last year, but forgot ... I'll check tomorrow.
No sieve at all, just my trusty stick blender.


Looks good. I must give that a try sometime.
Did you use a green apple (more acidic) or a red one?
I used a Zestar apple, about halfway to turning red:

You won’t find those at Kroger. You’ve got to go to a proper orchard for those.
