Recipe Bacon Fajita Stuffed Chicken Breast

Bacon Fajita Stuffed Chicken Breast:

Ingredients:

1) Chicken half breast - 1
2) Bacon - 1 slice
3) Anaheim pepper - 1/4
4) Onion - 1 slice
5) Tomato, Roma - 1/4
6) Salsa, divided - 2 tblspns. and as desired.
7) Cilantro - 1 tblspn.
8) Cheddar cheese - 1 inch wide slice.


Procedure:

-- Preparation --

1) Slice a pocket slit flat through the center of the chicken breast6
2) Fry the bacon and then cut it into pieces.
3) Julienne cut the Anaheim pepper.
4) Quarter cut the onion slice and divide the rings.
5) Dice the tomato.
6) Mix the Anaheim pepper, onion, tomato and cilantro.
7) Slice the cheese to obtain 4 inch wide slices.
8) Place a grill accessory on a baking sheet.
9) Preheat the oven to 350F.

-- Cook and Serve --

10) Spread the salsa on the bottom of the pocket slit in the chicken.
11) Pack in the Anaheim pepper, onion, tomato and cilantro mix.
12) Pack the bacon into the top of the pocket slit.
13) Insert the cheese slices.
14) Place the stuffed chicken half breast on the baking sheet grill.
15) Coat the top of the chicken breast with salsa.
16) Bake the stuffed chicken breast for 30+ minutes until done.
17) Plate the stuffed chicken breast.
18) Add any side dish elements.
19) Serve.
 
This looks amazing got to try it this coming weekend. Could I line the baking sheet with tin foil instead of using a grill accessory?
