Recipe Bacon, Lettuce and Tomato Sandwich (B.L.T.)

Ingredients

4 small bread rolls
8 lettuce leaves
4 rashers of bacon
4 fresh medium size tomatoes
Freshly ground black pepper

Method

Cut the tops off the tomatoes and part slice a cross into the bottom. Place them in boiling water for a few minutes then drain and allow to cool. When cool, peel the tomatoes and chop or blend.


Fry the bacon in its own fat until relatively crisp.

Reheat the tomatoes in a small sauce pan.

Cut slots into the bread rolls and spread open.

Place two lettuce leaves into each bread roll slot.

Fold the bacon rashers and place each one on top of the lettuce.

Spoon over the heated tomatoes and season with black pepper.

Serve hot.

 
If you are going to the trouble of peeling the tomatoes, you should try making/buying some tomato jam.
