Recipe Baked Garlic with Goat Cheese

Baked Garlic with Goat Cheese
Makes 4-6 portions (uh-oh, MrsT and I ate all of it!)

Ingredients
2 garlic heads, separated into cloves (20 cloves approx)
1/2 cup olive oil
100g goat cheese, crumbled
1 TB pine nuts
1-2 TB chopped chives
Salt and freshly ground black pepper
Baguette slices for serving

Directions
Set the oven to 350F.

Trim off the hard ends of the garlic cloves and peel. Places the cloves packed together in a small baking dish (one large enough to later accommodate the cheese) and pour over the oil. It should come around halfway up the cloves, but not completely cover them. Cover the baking dish with foil and bake for 30 minutes.

Remove from the oven, discard the foil, and sprinkle half the pine nuts over roasted garlic, then place back in the oven for 5-7 minutes longer, until the nuts just begin to brown.

Remove from the oven, then add in the crumbled cheese, evenly distributing it over the top, then finish with the rest of the pine nuts. Back into the oven for another 8-10 minutes, until the cheese has begun to melt.

Add salt and pepper to taste, then transfer to a serving dish. Top with chopped chives and serve immediately.
