Ingredients
  • 500 gms potatoes
  • Olive oil
  • Sea salt
  • 6 Garlic Cloves
  • 4 Fresh Chillis
  • 2 tsp Black peppercorns
  • ½ tsp Cumin seeds
  • 1tblsp Fresh coriander leaf

Method

Scrub and cube the potatoes (20mm) and par boil for 5 - 6 minutes.

Place the potato cubes in a roasting dish, brush with olive oil and sprinkle over the sea salt.

Roast the potatoes for about 30 minutes at 200°C or until golden brown.

Finely chop the garlic and chillis and stir fry in a little olive oil for about 3 minutes.

Grind the black pepper and cumin seeds together.


Mix the garlic and chilli, black pepper and cumin with the potatoes. Stir in the coriander leaf and serve hot.
