Recipe Beef Leek Rolls with Onion Rings

Beef and Leek Rolls with Onion Rings:

Ingredients:

1) Beef, Thin Sliced - 2 strips 2" wide and 5 to 6" long
2) Bacon - 3 Strips
3) Leek - 1/2 cut lengthwise.
4) Onion - 1/4
5) Anaheim Pepper
6) Carrot - 1/4
7) Cucumber - 1/8 to 1/4
8) Apricot, Dried - 6 to 8
9) Mango, Dried - 2 Pieces
10) Papaya, Dried - 2 Pieces
11) Cashews - 4
12) Pecans - 2
13) Beef Gravy (Bottled) - 4 Oz.
14) Potato, Baby Gold - 1
15) Egg - 1
16) Unbleached Wheat Flour - 1/8 Cup
17) Half N Half - 2 Tblspns.
18) Black Mustard Seed - 1 Tspn.
19) Vegetable Oil - as required


Procedure:

1) Julienne cut Anaheim Pepper, Leek, Carrot and Cucumber.

2) Cut Bacon Strips into lengthwise pieces.
3) Dice up the dried Apricots.
4) Cross slice the Onion and separate the rings.
5) Lay out 2 overlapping Beef strips.
6) Cover Beef strips with Leek, Anaheim Pepper, Carrot and Cucumber.
7) Cover again with Bacon pieces and half the Apricot pieces.

8) Roll up the Beef Strips.
9) Set the Beef Rolls aside in the refrigerator.
10) Mix the Egg, Flour and Half N Half in a mixing bowl.
11) Mix in the remaining half of the prepared Apricot pieces and Spice.
12) Pre-heat Vegetable Oil in a deep pot.
13) Successively dip each Onion Ring in the batter and deep fry.

NOTE: Use a spoon to put them in the oil so that bits of Apricot are included.

14) Remove the fried Onion Rings to a towel to absorb any Oil.
15) Microwave the Potato for 1-1/2 minutes on each side.
16) Set the Potato aside and keep warm.
17) Cut the Beef Roll in half.
18) Stand the Beef Rolls in a baking dish and cover with Gravy.

19) Cover the Beef Rolls with Onion Rings.
20) Cook in a microwave at high heat for 5 to 7 minutes.
21) Stand one Beef Roll on a white serving plate.
22) Quarter cut lengthwise, the Potato.
23) Cross slice (partially) each Potato Quarter.
24) Bend back the Potato Quarters and arrange on the plate.
25) Drip some Gravy and Vegetables over the Potato.
26) Decoratively lay out Mango, Papaya and Nuts on the plate.
27) If necessary, reheat in microwave for 2 minutes.
28) Serve.
 
A lot going on here - I fear rather too much as I'm having trouble imagining the various elements and how they work together. I do like the concept of the beef rolls. Its almost like a Chinese recipe. I also like the way you are using the microwave - its such an underused device.

Maybe its the colour balance in the photo - but if that is the potato on the right, it looks green. At first I thought it was courgette!

Don't imagine too hard. It all worked out very well and is very simple. You just julienne cut a bunch of stuff, roll it up in beef strips and then, make a Gravy. 1, 2, 3 - presto.

The Potato actually is green on the inside. I thought they would be gold inside when I bought them, but they were green inside.
