There's probably already a thread about this, but I thought I'd start my own. I just recently had to chuck out my one good carving knife and wanted to know if anyone had a favourite brand/size etc.? I'm a BIG Roast Duck person, but the knife'll get used at Christmas/Thanksgiving for Ham/Turkey etc. ANYWAY. Any suggestions/favourites?

Well FWIW forget the new stuff. Root about in the charity/second hand shops and look for a good old fashioned carbon steel knife [they can often be found in sets complete with fork and steel]. They will take a real edge and only cost pennies. Yes they do need a bit of care [unlike modern stainless they will rust] but what do you want - a knife or a shiny toy? After all a blunt knife is little more than a badly designed spoon.
