- 400 g beef (entrecote or any good quality steak)
- 2 onion (juice)
- ½ cup milk
- 2 potatoes
- 1 cup yogurt
- 1 clove of garlic
- 2 tomatoes
- 1 tbsp tomato paste
- 1 tbsp butter
- 2 tbsp olive oil
- 1 tsp paprika powder
- 1 tsp thyme
- Salt to taste
- Chopped parsley to garnish
- Cut the beef into thin strips, slightly thick juliennes
- Grate the onions and squeeze out the juice into a bowl
- Add the milk, 1 tbsp olive oil and mix the marinade
- Add the julienne beef into the bowl and let it rest in the marinade for 2 hours
- Cut the potatoes into matchstick size strips and transfer into a bowl with cold water
- For the sauce, grate the tomatoes and heat up olive oil in a pan and start cooking
- Add the tomato paste and ½ tsp salt and let it simmer and thicken, then set aside
- Once the marinated beef is ready, remove from the fridge
- Mince the garlic and mix with the yogurt with ½ tsp salt and set aside
- Heat up enough oil in a pan and start frying the drained potatoes in batches
- Once they are golden, transfer to a paper towel
- Start cooking the beef in a very hot pan and gently mix to cook evenly
- Add the butter, the paprika powder, thyme and salt to taste
- Stir and cook for 1-2 minutes
- Layer the fried potato sticks on a plate
- Pour and layer the garlic yogurt on top and pour some of the sauce over the yogurt
- Place the beef on top and pour more sauce over the beef
- Garnish with chopped parsley and serve.
