Recipe Brie and apple melts with caramelized onions

These sandwiches are absolutely delicious and easy to make. They’re fantastic in the fall when the apples are fresh and local. This recipe is adapted from Hello Fresh.

Ingredients:

1 small onion, peeled and sliced
2 tbsp butter
1 tbsp balsamic glaze
1 apple, cored and sliced
1 small wheel brie, cut into strips
1 tbsp dijon mustard
1 tbsp fig spread (if you can’t find it, I have substituted apple butter with good results)
2 crusty rolls

Directions:

Preheat broiler.

Melt 1 tbsp of butter in a pan over medium heat and add sliced onions. Cook, stirring, until they get soft, around 3-4 minutes. Add balsamic glaze and stir to coat onions. Remove from heat.

Melt the remaining butter in another pan and add apples. Cook 2 minutes or so, then add fig spread and stir to coat apples. Remove from heat.

Split rolls, and spread with mustard. Add the apples, then the onions, and finally top with the brie. Place under the broiler for a few minutes to melt the cheese, then close and enjoy!

Serves 2.
