Brussel sprouts, air-dried beef and juniper berries
I placed this recipe in this section as it contains a small amount of meat.
Cooking time 15 minutes
Serves 2
Ingredients
500 g cleaned Brussel Sprouts (rinsed, defective outer leaves discarded and tips of the stems cut off)
1,5 tblsp butter
1,5 tblsp evoo
50-70 g air-dried beef in extra thin slices
1 zest of lime
20 juniper berries, crushed in mortar
salt and black pepper to taste
small handful of dried cranberries
Preparation
Pre-cook the Brussel sprouts in steam or unsalted boiling water for 7-8 minutes until tender. Cut the cold meat into thin slivers.
Fry the sprouts in butter-oil mix on high heat with the beef, lime zest, crushed juniper berries and cranberries for 4-5 minutes or until adequately brown. Add salt and pepper to taste and garnish with cranberries, juniper berries, coriander and lime.
