These are pancakes my mother used to make, very useful in times of wheat shortages. Buckwheat, despite the name is not really a wheat but a seed but it still has very good nutritional properties and is available milled as flour. It is also naturally gluten free.
Ingredients for 8 pancakes:
2 ripe medium bananas
200 grams of buckwheat flour
500 ml milk
2 eggs
Pinch of salt and 1 teaspoon cinnamon (or less if you like it less pungent)
1) Mash the bananas in a bowl, then add the eggs and salt and cinnamon. Stir until mixed well.
2) Then add the buckwheat and a splash of milk until you have a thick mixture
3) Slowy add all the milk until the mixture is runny and glossy
Then make pancakes as you usually would, this recipe yields about 8 thin pancakes.
