A much loved dish from The Philipines, and so easy to make.
Ingredients
2kg Beef shin with bone in
1 large onion quartered
1 clove garlic slightly bashed
1 tbsp whole black peppercorns
3 tbsp fish sauce
3 cobs corn cut in to approx. 3-4 inch pieces
1-2 bunches bok choi
Salt to taste
Method
Put beef, onion, garlic, pepper, and salt in a large saucepan and add around 12 cups water. Bring to a boil, then simmer for around three hours until beef starts to become tender, skimming any impurities from the surface periodically. Add fish sauce and corn and simmer for another 20-30 minutes. Check seasoning. To serve put some uncooked bok choi leaves in a bowl and arrange some meat, marrow bone, and corn in the bowl as well, before pouring the boiling hot stock in to the bowl. Serve immediatly.
