I was looking at the following recipe, which called for "raw steak trimmings"...

...and I am not entirely sure what they mean by this. Are these left over bits and pieces from the specific areas of meat that they get the NY Strip Steak from? Or Ribeye? Or are these just beef scraps in general?
It says to just ask your butcher, but I have a feeling I am going to walk into my grocery store and ask them and they are going to look at me like I'm nuts or something. Is this just something like stew meat? Or are these trimmings of beef fat?
