Cabbage Gratin
Makes 2 servings

Ingredients
2 cups shredded cabbage
1/2 cup grated carrot
1/4 cup chopped green onions
1 egg
1/2 cup milk
3 TB shredded Swiss cheese
1/4 tsp seasoned salt
1 tsp minced fresh parsley
1 TB shredded Parmesan cheese

Directions
Heat oven to 350F and grease a shallow 1-qt baking dish.

In a large skillet coated with cooking spray, sauté the cabbage, carrot and onions for 5-7 minutes, until crisp-tender. Transfer to the prepared baking dish.

In a bowl, combine the egg, milk, Swiss cheese and seasoned salt. Pour over the vegetables. Sprinkle with parsley and Parmesan cheese. Bake, uncovered, for 30-35 minutes or until a knife inserted in the center comes out clean.

That looks very good. And you succeeded in making a gratin (not the easiest thing to photograph) look colourful. What kind of cabbage did you use?

That looks lovely! At first I thought it would be like a patty, but this is so much eaasier and could be a self-standing dish, too!
