Easy to make and they look pretty! I made my own Cajun seasoning but you could use a ready made version. The pea-shoots were grown on my windowsill - pop a few dried peas on some damp kitchen towel in a shallow container and keep the paper moist. You will have pea shoots in a matter of days. I'm intolerant of mayo so I used almond milk to bind the yolks.
Ingredients
For the Cajun Seasoning
2 ½ tablespoons paprika
1 tbsp salt
2 tbsp garlic powder
1 tbsp black pepper
1 tbsp onion powder
1 tbsp cayenne pepper
1 tbsp dried oregano
1 tbsp mustard powder
The rest
Hard boiled eggs
Mayonnaise or almond milk
Celery seeds
Pea shoots and dill

Method
- Mix together all the ingredients for the Cajun seasoning. There will be far more than you need.
- Place the yolks of the hard boiled eggs in a bowl and add Cajun seasoning to taste (I used approximately 3 tsp for 6 eggs).
- Mix in just enough mayonnaise or almond milk to bind the mixture and spoon back into the eggs.
- Scatter with celery seeds and garnish with dill and pea shoots.
