Cakes with vegetables

Hi, I recently ate an interesting cake with spinach and layered with cream. I really liked it and I wonder if, apart from this taste and carrot cake, you have ever eaten this type of cake. What do you think about them? maybe you have some recipes of your own? :)

Love the idea of the courgette recipes, because courgettes are sort of difficult to know how to use. I love them (as I love all vegetables) but my limitations usually include sauteed courgettes, courgette & basil tart, and courgette carpaccio. Then my brain blocks.:laugh::laugh:
Someone once recommended a recipe for courgette "polpette" (posh name for fritters) by Hugh Fairly-Whittyless, or whatever his name is. Absolutely dreadful - bland, tasteless, uninteresting.
Then I found another for courgettes with cumin seeds. "That can't be too exciting," I thought - but it was great.
Using cucumber in a cake really sounds good.
So here's the deal. You make them and I'll try them!

Yes, you'd definitely need something to add interest / accent to a bland veg.
I can't say I'll try them all, but the cucumber lemon one is the most likely first to try.
I shall have to post as and when I do
 
That looks very creative! Love the thought of the parsnip, orange and coriander .
My only issue would be the excruciating amount of sugar (750 gms???) in the frosting. Just thinking about it sets my teeth on edge!
Don’t forgot all that sugar in the cake as well. Who’s says vegetables have to be healthy? :laugh:
