Ingredients
1 head cauliflower ( cleaned )
4 cups vegetable stock
12 ounces shredded cheddar cheese ( I prefer sharp, but any kind works )
6 ounces Guinness stout ( the other half of the can is for you to drink )
to taste salt & pepper
to taste scallions ( optional garnish )
to taste parsley ( optional garnish )
to taste smoked paprika ( optional garnish )
Directions
Boil the cauliflower in the stock.
Once the cauliflower is soft, use a stick mixer and puree the cauliflower.
Reduce the heat to low and add the shredded Cheddar stir occasionally until the cheese melts.
Add the Guinness and stir.
Check your soup and see if it needs any salt or pepper.
Garnish with scallions, parsley, or smoked paprika
