I've just found out about using cauliflower as a healthier alternative to cooked rice. Cauliflower rice ideal for anyone on a low carb, patheo, vegan or weight loss diet.

You just need to grate the florets or put them into a food processor and grind into rice-sized pieces. Then these can be cooked in a skillet and used in any dish in place of rice.

That literally is "food for thought" like your screen name. I've never heard of this, I'll have to give it a whirl and see if it's any decent ( to my tastebuds )

I'm not a big fan of cauliflower.

This much is true, but if you spice it well and add a decent amount of margarine or butter, you really can't tell a difference in the long run I found out. I think is because cauliflower has a chalky-taste and the spices help.

I have never thought of substituting cauliflower for rice but have mashed cauliflower instead of potatoes which are quite good, healthy and a very nice change. Of course, I love cauliflower which certainly helps, too.

Oh wow, that's fantastic news... thanks for the share, I've always wondered what I could use as a substitute for rice! I will definitely give this a try and see how everyone else in the family likes it.. let's hope that it goes well as we all honestly do love rice!

That is a great idea but I don't like cauliflower, I love rice. If you need to add a lot of butter to the cauliflower to make it taste better isn't it just as easy to eat the rice just cut down on the butter you add to the rice. A good compromise maybe to make it half and half for those that do not like cauliflower, hide it in with rice until you get use to the taste and gradually add more cauliflower and less rice.

@Shermie, you really got to try some of these new ways of making cauliflower! You won't even know it's cauliflower. My mom used to steam a cauliflower head and served it with bread crumbs browned in butter. Steamed cauliflower has a certain taste, and I can see why some people aren't a fan.

But recently I tried making mashed potatoes, but out of cauliflower. I pureed the cauliflower, added sour cream, chives, salt and pepper - trust me, my husband couldn't even figure out what it was!

Then I've tried the cauliflower crust pizza - another winner! You'd never guess the base is cauliflower.

I've not tried to make this cauliflower rice yet but am sure it will be another hit. I've been so pleased with all these new recipes coming out that use it!

I have never heard of cauliflower as a rice replacer. I may have to look into this even though rice is fairly healthy if you eat brown or better yet black rice. That's for the post!

I havent tried it. I dont know how a cauliflower can be a substitute for rice. By the way in our province we have some substitute for rice these includes corn, sweet potatoes, potatoes and sometimes cassava.

The cauliflower rice is a cooks artistic licsince to rename things, like aubergine cannelloni has no pasta in it,but if you like chopped and stirfried cauliflower happy days, using something like sesame oil would add a bit more flavour

I love eating cauliflower and this is the only first time I've heard using this as a substitute for cooked rice. What I usually do is when I am cooking cauliflower is I cooked it together with other vegetables like cabbage, bell pepper, mushroom, young corn, celery stalks, chopped chicken and oyster sauce. This recipe is the one we are always cooking with cauliflower. Since our family like this vegetable maybe we can try this one for something new. Thanks for sharing.
