There was a bit of a PR problem for M&S earlier this year for selling cauliflower 'steaks' with a dressing for £2ish. So I made my own for a tiny fraction of the price.
Cauliflower:
Cauliflower cut the steaks about 1cm thick (I had a small cauliflower so only managed two steaks. (I'll use the 'ends' for another recipe).
1 lemon juice and zest
4 tsp sumac
Flour (gluten free)
Greens:
I head of spring greens plus the smaller leaves form the cauliflower. Cut into thin strips
5 spring onions sliced into 1cm pieces
1 clove of garlic crushed
half a red chilli finely sliced
Tahini sauce:
2 tbsp tahini
2 tbsp lemon juice
1 tbsp olive oil
2 tbsp yoghurt (plant-based)
salt

Cauliflower
Marinade cauliflower in lemon juice and zest (I only had about ten minutes).
Microwave, covered for 3 minutes.
Sprinkle each side with teaspoon of sumac
Drench in flour
Griddle (with a little oil) on a high heat for a minute on each side (when nice and golden brown)
Greens:
Fry in a little oil over high heat for two minutes
Add the rest of the ingredients and fry until tender (another two minutes I think it was)
Tahini sauce:
Mix everything (apart form the za'atar) together with a stick blender. Serve with the Za'atar sprinkled on top.
It was all very tasty and there is tahini sauce for today too.
