My biggest limit in the kitchen (I have many) is that I don't want to spend too much time cooking :D

Ingredients:
4 stalks of celery
100 gr gorgonzola (blue cheese)
50 gr ricotta
10 walnut kernels
1 pinch of ginger powder
salt

Method:
Clean and wash the stalks of celery and remove the filaments with a knife. Dry it and cut it into pieces.
Process the gorgonzola with a fork until it becomes a cream, then add the ricotta, ginger powder and the kernels of finely chopped walnuts and mix again very well.
Pour with a pastry bag on the stalks of celery with a piece of walnut kernel.

Looks good. I told Craig I was waiting for somebody to mention stuffed celery. I remember that being a fad at socials and church gatherings back in the day. People came up with all kinds of fillings. That gorgonzola mousse looks and sounds really good.

@Sandra

Sublimely wonderful ..

I do same but spread the Gorgonzola inside of the celery stalks ..

I eat it as a cruditie snack .. I am a grand fan of blue cheese especially Asturian Picón, Asturian Cabrales, Gorgonzola and Roquefort & with the celery -- it is very refreshing ..

Have a lovely evening ..
