I got the original recipe from Spruceeats, but as usual I changed it a bit.
- 1 chicken cut in pieces
- 2 cups chicken stock
- 2 cups water
- 2 carrots sliced
- salt and pepper to taste
- 2 to 3 sprigs thyme
- 2 to 3 sprigs parsley
- 1 sprigs rosemary
- 1 chorizo
- 1 cup long grain white rice
- 5 pieces of scallions, sliced
1. On a pan, get water, chicken stock, chicken, salt, pepper, herbs and carrots. Bring to a boil and then reduce to a simmer, let it simmer until chicken is cooked (20/25 minutes).
2. Remove solids from the pan, reduce sauce and correct seasoning if needed.
3. Add rice, chicken, scallions and chorizo cut in slices. When the rice is cooked, turn off and add carrots and sprinkle with chopped parsley or cilantro
