Everyone's fave here, chicken croquettes, I make a double batch and freeze they are that popular.
Ingredients
4 chicken breasts
4 teaspoons gelatine
1/2 pound butter
3/4 cup flour
Salt and pepper
1/4 cup chopped parsley
2 teaspoons powdered mustard
300 mls full cream
Eggs 2
Milk
Breadcrumbs, I use white and mix with whole meal.
Method
These won't last long. Serve deep fried with segments of tomatoes and mustard from squirty bottle. ( hot dog) I just know that this works really well.

Method
- Boil chicken until cooked, reserve 1 1/2. Cups of stock from chicken, add gelatine and mix and let stand. Pit chicken through a whizz until it's chopped up, add at end.
- Start the roux with butter then flour combined. Add mustard parsley s and p . Stir and add stock, then add cream and heat until thick. Pour into flat tray and cover with clear film to stop a film forming. Chill until set.
- When ready cut into fingers and roll into cylinders, roll in seasoned flour, then dip in egg wash, then crumb, then egg wash and crumb again. Freeze.
