Chicken Piccata:

Ingredients:

1) Chicken half breast - 1
2) Flour - 3/4 cup
3) Bread crumbs - 1/4 cup
4) Butter - 2 tblspns.
5) Olive oil - 2 tblspns.
6) Lemon - 1/2
7) Capers - 2 tblspns.
8) Shallot - 1
9) Garlic, minced - 2 tblspns.
10) Chicken broth using better than bouillon (BTB)
11) Black pepper, divided - as desired
12) Lemon Zest, divided - as desired
13) Basil - 1 tspn.
14) Lemon juice - 3 tblspns.
15) Cilantro, fresh - a few sprigs



Procedure:

-- Preparation --

1) Thin slice the chicken breast horizontally.

NOTE: To thin slice the chicken breast, carefully hold it on its side and using a good sharp knife, slice off 1/8" slices (about 3).

2) Cross slice the lemon and then halve the slices.
3) Dice the shallot.
4) Mix together the flour and bread crumbs.


-- Cook and Serve --

5) Sprinkle the chicken slices with black pepper and lemon zest.
6) Coat the chicken slices with the flour and bread crumb mix.
7) Pan fry the chicken slices in oil and butter.
8) Remove the fried chicken slices and set them aside.
9) Add the shallot and garlic to the pan in the drippings and fry.

NOTE: Add more butter and oil at a 1:1 ratio, if it appears necessary.

10) Stir in the BTB and simmer.
11) Stir in the lemon juice.
12) Stir in the capers, basil, black pepper and lemon zest.
13) While still heating, stir in the lemon half slices.
14) Plate the fried chicken slices.
15) Cover the chicken slices with sauce.
16) Garnish with cilantro.
17) Serve.
