Recipe Chicken Pot Pie

Chicken pot pie is one of those comforting recipes that is just good anytime, but especially if you have had a long day, Here is one of my family's favorite recipes and I just usually serve it with a side salad and call it dinner!

Ingredients:
1 pound skinless, boneless chicken
breast halves - cubed
1 cup sliced carrots
1 cup frozen green peas
1/2 cup sliced celery
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour


1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1 3/4 cups chicken broth
2/3 cup milk
2 (9 inch) unbaked pie crusts
Directions:

Preheat oven to 425 degrees F

In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.

In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.

Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.

5.Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.
 
Sounds fantastic! Thank you for sharing! I will certainly have to try this recipe out! Perhaps I will make it this weekend? One of the things I love about chicken pot pie, is you can add as many veggies as you want! You can have a huge variety and everything goes! :)
 
Hey! That's amazingly superb to imagine the taste of this recipe. I would surely try this within a couple of days. Do you have any images of this recipe with you? I'm very eager to see hoe it looks, before I give it a try.
 
I made my very first chicken pot pie this year and it was a success. I think I want to play around with my crust recipe though. I like a flakier crust and mine just wasn't there.

Chicken pot pie is one of my go-to winter recipes, especially if I'm trying to use up extra leftover chicken. It is also a great way to repurpose the rotisserie chickens you can buy already cooked at the grocery store.

I've gotten to the point where my chicken pot pie is basically "leftovers" pie, and my family loves it. I'm so partial to it now that I won't order it in a restaurant anymore, and when others make it with canned chicken and canned veggies, I'm just disappointed. Never thought I'd become a food snob, but some things are just too easy to do well, you know?
 
Wow! This is the recipe i have been looking for! I've always wanted to try making Chicken Pot Pie, but I always though it was out of my cooking capabilities. Just seemed like so much stuff to consider, but after reading this recipe, it no longer seems intimidating. I will try making it this weekend. Dumb Question: I have never heard of celery seeds before, where can you find those?
 
I have tried to make a chicken pot pie a few times. I was happy with the filling but really didn't much care for the crust at all. I'm not much in to crust making to begin with so I may have to come up with another plan for making it happen.
