Ingredients
  • 400 gm Chicken breast cut into bite size pieces.
  • 3 Tomatoes, peeled and liquidized.
  • 2 tblsp Olive oil (plus a little more for brushing).
  • 2 tsp Pureed garlic.
  • 2 tblsp Fresh coriander, chopped.
  • 1 small onion, chopped.
  • Salt and freshly ground black pepper.

Method

Put the chicken pieces into a bowl.

Mix the tomatoes, olive oil, garlic, and coriander in a jug and then pour over the chicken.

Mix well, cover and refrigerate overnight.

Thread the chicken pieces onto skewers and brush with olive oil. Season.

Grill with the chopped onion, turning often, until cooked and slightly charred.

A nice simple recipe. I recently bought some wooden Kabob skewers, but how I will use them is yet to come.

I donated all of my metal skewers and use only wood. I found that the metal skewers heated the meat from the inside and resulted in over cooking. Do soak the wood skewers prior to using.
