Ingredients
250gms milk arrowroot biscuits (or suitable substitution)
2 cups desiccated coconut
1/4 cup good quality cocoa
1 can (395gm) sweetened condensed milk
75gms dried unsweetened cranberries
Rum to taste (1-3 tbsp)
Method
Crush the biscuits and place in a bowl. Add one cup of the coconut, cocoa, condensed milk, cranberries, and rum, and thoroughly mix. Take a spoonful of mixture and roll in to individual balls, and roll each ball in reserved desiccated coconut. Place balls in fridge for a minimum of two hours before serving.
