Ingredients: 250 gms sharp green apples
250 gms pears
90 gms stoned dates
75 gms raisins
90 gms onion
12 gms fresh ginger, grated
2 cloves garlic, minced
350 gms brown sugar
200 mls wine vinegar
75 mls water
1 tsp coriander powder
¼ tsp each cayenne, cinnamon and cloves
1 tsp salt
Method:
- Peel and core the apples and pears, then dice.
- Chop the dates and blend in a food processor together with the raisins, onion, ginger, garlic and vinegar
- Put all the ingredients in large pan and bring to a boil. Lower the temperature to medium and cook for about 20-30 minutes, until the mixture thickens.
- Makes around 5 - 6 200cc jars.
