Ingredients
2 cup all purpose flour
2 cup cornmeal
2 tablespoon sugar
2 tablespoon baking powder
1 teaspoon salt
2 cup milk
2 eggs
1/2 cup vegetable oil
Method
A 12 and 7/16 inch cast iron skillet or a 12 or 13 inch cast iron skillet
- Preheat oven to 425° F. Wipe the cast iron skillet with some bacon grease. Or use whatever oil you season it with.
- Mix dry ingredients. Sift if necessary.
- Add in the liquid ingredients. Stir well. It is preferable to use a wooden spoon.
- Pour into cast iron skillet. Bake at 425°F for 25 minutes.
- Remove immediately from pan onto a towel or large cooling rack. The towel keeps moisture from building up.
- Use good potholders or a thick towel. The pan will be super hot. Put the pan either on the stove or back in the oven to cool. Enjoy with butter, or milk or put in a bowl and cover with pinto beans.
