Ingredients
2 cups Masa de Maiz (cornflour treated with lime)
1 to 1 1/2 cups water.
Method
Mix together until the dough comes together. Let rest about 15 minutes.
While it is resting, get out a cast iron griddle or skillet, your tortilla press and some plastic wrap. I prefer the Lodge cast iron 14 inch pizza pan. Wipe it with whatever oil you seasoned the pan with. Preheat the griddle on the stove. When water sizzles, it is ready.
Make about 1 and a quarter inch balls from the masa. Put plastic wrap on both sides of the press. You can use a rolling pin but it is hard to get as flat as you need. Put a ball in the center of the press. Close the press. Then push down twice.
Put tortilla on the griddle and cook about 45 seconds on each side. Make the next tortilla while that one is cooking.
I usually do about 6 before I start cooking them because my griddle holds 3.
