Crock Pot Chicken and Dumplings

6 dumplings
Serves 4
- 2 lbs. boneless chicken breast
- 2 cans cream of chicken soup
- 1 can chicken broth
- 2 tbs butter
- salt and pepper to taste
- water
- dumplings recipe (to follow)
- Place chicken breast and butter in a crock pot
- Pour in soup and broth (use water to make sure chicken is covered in liquid - too much broth and it could be too salty)
- Salt and pepper to taste
- Cook on low 4 hours
- Chicken should be fork tender, use two forks to "shred" the chicken
- Add dumplings and carefully submerge them in the sauce
- Cook, covered for 15 minutes or until dumplings are floating in liquid

- 1 cup flour
- 2 teaspoons baking powder
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 2 tablespoon salt
- 1/2 cup milk
- optional, 1 tablespoon dried parsley
- In a large bowl, combine dry ingredients
- Cut in butter and add milk to form a soft dough
- If dough is too sticky, add more flour.
- Drop dumplings in hot liquid and cook, covered for 15 minutes
- Add parsley for parsley dumplings
