Crock Pot Chicken and Dumplings
Serves 4
  • 2 lbs. boneless chicken breast
  • 2 cans cream of chicken soup
  • 1 can chicken broth
  • 2 tbs butter
  • salt and pepper to taste
  • water
  • dumplings recipe (to follow)
  1. Place chicken breast and butter in a crock pot
  2. Pour in soup and broth (use water to make sure chicken is covered in liquid - too much broth and it could be too salty)
  3. Salt and pepper to taste
  4. Cook on low 4 hours
  5. Chicken should be fork tender, use two forks to "shred" the chicken
  6. Add dumplings and carefully submerge them in the sauce
  7. Cook, covered for 15 minutes or until dumplings are floating in liquid
Dumplings
6 dumplings
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoon salt
  • 1/2 cup milk
  • optional, 1 tablespoon dried parsley
  1. In a large bowl, combine dry ingredients
  2. Cut in butter and add milk to form a soft dough
  3. If dough is too sticky, add more flour.
  4. Drop dumplings in hot liquid and cook, covered for 15 minutes
  5. Add parsley for parsley dumplings
Alternatively, you can use refrigerated biscuit dough torn up into pieces or rolled into balls, but I always suggest using organic, whole ingredients whenever possible. Enjoy.
 
I used to make something similar. The difference is that I add chili flakes (I'm a chili fan), garlic and chopped to the chicken together with the broth and the other soup ingredients. I also add chopped garlic and chopped fresh coriander to the dumplings for a more Asian flavor.
 
Thanks for the recipe! I usually make my chicken and dumplings in a pot over the stove that slow-cooks, but same concept.

For the lazy like me: You can buy pre-made dumplings/rolls, and just place that dough over the chicken and veggies in the pot and it works out deliciously :) Just a little time-saving tip, though obviously the homemade ones will far outweigh the store bought.
