Dutch Cheese Soup

This soup is a recipe from Holland made with the famous gouda cheese and cauliflowers.

The Dutch people love cheese and call it "yellow gold".
This soup is a recipe from Holland made with the famous gouda cheese and cauliflowers.
Ingredients:
- 1 onion
- 2 carrots
- 3 cloves garlic
- 6 cups cauliflower florets
- 3 tbsp extra-virgin olive oil
- Salt and ground white pepper to taste
- 1 bay leaf
- 6 cups chicken broth
- 2 cups grated /sliced gouda
- 1 tbsp mustard (Dijon-style or English)
- 2 tbsp cooking cream
- 1 tablespoon butter
- Chopped green onions and paprika infused olive oil for garnish
Instructions
- Roughly chop the onion, carrots and garlic and combine with the cauliflower, 1 tablespoon of the olive oil and salt and pepper in a large soup pot.
- Cook over medium heat until vegetables soften and onions become slightly brown
- Add the bay leaf and chicken broth and bring to a simmer.
- Cover and cook for 15 to 20 minutes.
- Remove the bay leaf and purée the soup until smooth.
- In a separate pan, melt olive oil with some paprika powder
- Toast some bread in this pan for garnish, save the oil
- Just prior to serving the soup, stir in the gouda, mustard, cream and butter.
- Taste and season with salt and pepper if needed.
- Continue cooking until cheese has melted and soup is smooth, 1 to 2 minutes.
- Serve in a bowl, garnish with toasted bread paprika oil from the pan and chopped green onions
