Dutch Cheese Soup
The Dutch people love cheese and call it "yellow gold".
This soup is a recipe from Holland made with the famous gouda cheese and cauliflowers.

Ingredients:
  • 1 onion
  • 2 carrots
  • 3 cloves garlic
  • 6 cups cauliflower florets
  • 3 tbsp extra-virgin olive oil
  • Salt and ground white pepper to taste
  • 1 bay leaf
  • 6 cups chicken broth
  • 2 cups grated /sliced gouda
  • 1 tbsp mustard (Dijon-style or English)
  • 2 tbsp cooking cream
  • 1 tablespoon butter
  • Chopped green onions and paprika infused olive oil for garnish

Instructions
  • Roughly chop the onion, carrots and garlic and combine with the cauliflower, 1 tablespoon of the olive oil and salt and pepper in a large soup pot.
  • Cook over medium heat until vegetables soften and onions become slightly brown
  • Add the bay leaf and chicken broth and bring to a simmer.
  • Cover and cook for 15 to 20 minutes.
  • Remove the bay leaf and purée the soup until smooth.
  • In a separate pan, melt olive oil with some paprika powder
  • Toast some bread in this pan for garnish, save the oil
  • Just prior to serving the soup, stir in the gouda, mustard, cream and butter.
  • Taste and season with salt and pepper if needed.
  • Continue cooking until cheese has melted and soup is smooth, 1 to 2 minutes.
  • Serve in a bowl, garnish with toasted bread paprika oil from the pan and chopped green onions
