Easy Applesauce Cake
Makes 1 8-inch x 8-inch cake

Ingredients
1 ¼ cups AP flour
2/3 cup light brown sugar, firmly packed
1 tsp ground cinnamon
¾ tsp baking powder
¾ tsp baking soda
¼ tsp kosher salt
1 egg
⅓ cup olive oil
½ cup plain Greek yogurt
½ cup unsweetened applesauce
1 tsp vanilla extract
¼ tsp rose water (optional)
Powdered sugar, for dusting

Directions
Set the oven to 350F and grease an 8-inch x 8-inch baking pan.

Add all the dry ingredients (flour through the salt) to the baking pan and mix thoroughly with a fork. Make sure there are no clumps of brown sugar.

Make a well in the middle of the flour mixture, crack in the egg, and add in all the wet ingredients (through the rose water, if using). Mix again with a fork until no dry bits remain and the batter is smooth. Smooth the top and tap on the counter a few times to help release any air bubbles in the batter.

Place in the oven and bake for 25-30 minutes, or until skewer inserted in the center of the cake comes out clean.

Let cool completely, dust with powdered sugar, cut into squares, and serve directly from the pan.

That looks great.
Other than having to make my own apple sauce, I reckon I could easily make a dairy free version using soy yoghurt.
