Elevating dishes: The art of cooking with olive oil

I have a deep passion for extra virgin olive oil and its role in elevating flavors in differente cuisines.
I´d love to hear your thoughts-what are your favorite ways to use olive oil to enhance dishes? Any special techniques or pairings you´d recommend?

I'm lucky because I live in the cold grape and olive growing area of Australia. I am surrounded by olive groves and local olive oil farms, many winning prizes at the Royal Sydney agricultural show. It isn't quite the rural Greece approach of turn up with an empty container to fill which we encountered many years ago on Rhodes, but close.

One of my favorite ways of using olive oil is in a rich chickpea salad we tend to make just one a year for Christmas Recipe - Chickpea Salad


Another is a flatbread I sometimes make. The trick is to be generous with the olive oil and not be on a diet at the time!
