Ingredients (For Two Sandwiches)
2 Crusty Baguettes, Split lengthways and toasted
1 cup salted roasted peanuts
2 Lady Finger bananas, split lengthways then halved
6 slices rindless bacon, use just the fat half (In Australia we can buy it that way)
Good Drizzle honey
1 tsp salt
Cayenne pepper (optional) to taste
Method
Make your peanut butter by placing nuts in a small processor or blender, along with extra salt (if needed) and cayenne.
Process for several minutes, stopping intermittingly to check with spoon, and rest processor.
Continue to process until nuts form a creamy paste as oils are released.
Cook bacon slices in a frypan on a medium heat.
Set aside bacon, but leave bacon fat in frypan.
On a plate, drizzle honey over banana slices, and swish around to coat both sides.
This may result in sticky fingers.
Saute banana in the frypan with the bacon fat until caramelised.
Spread a generous amount of peanut paste on bottom bun slice, then top with bacon and banana.
Place top slice of bun on top, and enjoy.
