Can someone please tell me what esters are? I see them listed as an ingredient in certain soup products, usually as 'citric acid esters of (glycerides)'?

Now that you have a chemical description of esters I can tell you that they are used for making artificial fruit flavors. Nothing nutritious about them. This what we are talking about when we talk about processed foods.
 
esters . . . did some work for a flavor development / ingredient supply company.
it was absolutely nothing more than a very educated and skilled chem lab.

absolutely everything came out of a glass bottle with a ground stopper, dumped into a ribbon blender full of (various modified sugar compounds) - there was not a "natural" anything . . .

they could produce any flavor or smell your little ole' marketing department desired.
 
Sure, but there are naturally formed esters as well.
I brew small batches of beer and esp the Belgian yeast form esters. Their formation depends on the fermentation temperature and they make a big difference in the taste.
