'Fake' Sushi Is Taking Over ...

I've read about those escolar fish. Escolar - Wikipedia
Escolar at our sushi restaurants is listed as escolar. They used to call it white tuna up until about 8 years ago, though when we asked the sushi chef why the flesh was white he explained it wasn't really a tuna. It's really quite delicious, my husband always get it along with salmon and a maki roll. I like it ok but prefer ahi tuna, salmon, and eel (cooked eel). The trick with escolar is not to eat too much of it or you might have digestive issues, though we've never had any problems.

Chilean seabass (not found at sushi restaurants) isn't a seabass, it's a Patagonia toothfish. I like it anyway. Cooked, of course!
 
We've pretty much exhausted the oceans bounty in the top 100' which is where what we're supposed to eat comes from hence we're now eating "things from the deep". :o_o:

Hey, at least in the US we aren't eating whales. I think I remember someone (maybe vernplum) mentioning they saw whale on a menu somewhere...I can't remember exactly.

I like salmon quite a bit. I bought some stock in a company that is trying to farm salmon in tanks inland. I hope they are successful.

Edit: yeah, it was vernplum who had whale sushi. I remembered it a little wrong, though, he wasn't saying it was on the menu, it was on his plate!

I like salmon too, so does Pippi! You know the farmed salmon is fed dyed food to make them pink since they're not in the wild eating krill?

I don't think the farm raised stuff I buy is dyed, it's a pale pink color? I really prefer buying the deep reddish orange wild caught, but it's soooo expensive!
 
I am familiar, but I am pretty sure that my light pink isn't fed dyed food or otherwise dyed...
They're from Chernobyl???

hmmm, looks like a survivor in the koi pond . . .

we get sushi from our local market, only on Wednesdays (half-price)
the sushi artists are there, on site, right in front of you . . . slicing and rolling and (etc)
the fish is supplied from the fish counter - I've seen them going&comingbackwith . . .
my point... not likely to be off/under the counterfit fish - I can spot farmed salmon from wild caught sockeye from trout from snapper from tilapia . . .

their 'offered selection' is to near exclusion .... what they can make from the fish counter just down the aisle.
I have never seen them doing anything "eel" - and the market does not have "eel" at the fish counter . . .

of course, the various 'other fixings' which 'convert' the same fish into multi-named 'rolls' is one source of fakeness - but faking an avocado prepped 'as you watch' is pretty difficult to fake.... otoh, the crab is fake and they label as fake . . .
