Furikake Salmon Bowl:
Ingredients:
1) Salmon fillet - 1/2
2) Rice, sushi grade - 1/16 cup
3) Snow peas - 1
4) Broccoli tips - 4 to 5
5) Scallion - 1 to 2 pinches
6) Morel mushrooms - 2
7) Chanterelle mushrooms - 2
8) Pea shoots - 1 to 2 pinches
9) Sun dried tomato, julienne cut - 1 to 2 pieces
10) Avocado - 1/2
11) Furikake seasoning - as desired
Procedure:
-- Preparation --
1) Cook the rice till soft and sticky.
2) Pan fry the salmon.
3) Steam the snow peas and broccoli.
4) Cross cut the scallion into pieces.
5) Cut the snow pea in half and the avocado half into 2 quarters.
NOTE: If using dried morels and chanterelle mushrooms, soak them in advance.
-- Prepare and Serve --
6) Fill a serving bowl with mounded rice.
7) Sprinkle on furikake.
8) Set the salmon and avocado in the bowl and offset to one side.
9) Set the broccoli, tomato, snow peas and mushrooms in the bowl.
10) Sprinkle in the scallion and pea shoots.
11) Sprinkle the salmon and vegetables with more furikake.
12) Serve.
