Garlic and Shallot Barbecue Pork Chops:
Ingredients:
1) Pork Chop - 1 Thick Cut
2) Garlic - 1/8 Cup
3) Shallot - 1
4) Home Made Fig Barbecue Sauce - as required
5) Water - as required
Procedure:
1) Marinate the Pork Chop(s) in the Sauce over night.
Next day ...
2) Cross cut the Shallot.
3) If necessary, skin the Garlic, but use whole pieces.
4) Mix the Shallot and Garlic with enough BBQ Sauce to coat them.
5) Place the Shallot and Garlic in a drip pan beneath a grilling rack.
6) Add a small amount of water.
7) Place the Pork Chop on the grilling rack.
8) Pre-heat the oven to 325F.
9) Place the drip pan and grilling rack with Pork Shops in the oven.
10) Bake for 20 to 30 minutes.
11) Test for dryness and if necessary add water to the drip pan.
12) Remove when the Pork Chop is browned.
13) Place the Pork Chop on a serving dish.
14) Cover the Pork Chop with Shallot and Garlic in Sauce.
15) Add a side dish and serve.
