This is a very simple recipe. It would be silly to post exact quantities of ingredients. Its down to common sense and individual taste as to how much garlic you like. I made this last night to accompany roast lamb and brussels sprouts.
Garlic and thyme potatoes
Ingredients:
Cooked potatoes (any type)
Fresh thyme leaves. You could use dried thyme or oregano.
Butter
Minced/finely chopped garlic

Method:
- Butter an oven-proof dish.
- Cut potatoes into thickish discs and place a layer of potato in the base of the dish.
- Dot with generous amounts of butter, garlic, salt and pepper and thyme.
- Repeat layers until you have used up all the potato.
- Dot butter over the top.
- Bake at 180 C for 25 mins or until the top is crisped and golden.
