Recipe Garlic and thyme potatoes (competition entry)

This is a very simple recipe. It would be silly to post exact quantities of ingredients. Its down to common sense and individual taste as to how much garlic you like. I made this last night to accompany roast lamb and brussels sprouts.

Garlic and thyme potatoes

Ingredients:
Cooked potatoes (any type)
Fresh thyme leaves. You could use dried thyme or oregano.
Butter
Minced/finely chopped garlic

Method:
  • Butter an oven-proof dish.
  • Cut potatoes into thickish discs and place a layer of potato in the base of the dish.
  • Dot with generous amounts of butter, garlic, salt and pepper and thyme.
  • Repeat layers until you have used up all the potato.
  • Dot butter over the top.
  • Bake at 180 C for 25 mins or until the top is crisped and golden.

 
This looks lovely! I absolutely love potatoes and could live off of them for a year :laugh: would recommend if someone could make a twice-baked version and maybe some dip to go with it as well.
