Gas or electric cooker - which do you prefer?

I suspect this post is going to cause another thread move 😂

I prefer cooking on gas by a long, long way.
I like the induction hob for how easy is is to clean but then I don’t like how it heats at low temperature and I’m not thrilled with the steps in heat, there’s a lack of nuance between some levels.

I wanted to cook something for an hour at 60 degrees the other day and it was delicate, easily over cooked but the on off nature of an induction hobs heat delivery made it very difficult to stabilise. I ended up sat next to it for an hour with a thermometer 🥱

I also don’t like that I can’t shake the pan on the hob without knowing I’m possibly damaging the glass, with gas the pan racks mean you can have at it! 😂
 
Hard red clay you are correct. The house, and my garage converted to a house, were built in 1903 and the house has gas but electric only to the garage. When it was remodeled no justifying another gas line/meter and all that plumbing to provide gas appliances. Power bill is *&^%# high but 3 years ago I got 1400 ft^2 house for less than $160K and on 5 acres. 6 of one and 1/2 dozen of the other...
 
All electric here.
I hate it with a passion. No control over the cooking process.
You need a cooking control device...

My mom burned a lot of food due to us having electric ranges/stovetops for most of my life. I grew up learning to take food off the burner when we had an electric stove. Apparently she missed the memo. Anyhoo, with gas it's pretty great that when I turn off the burner there is no more heat. Some of my kids had a hard time adjusting to their first apartments after growing up with gas stoves.
 
There's no control with electric. You can turn it down and it takes 5 minutes. You can turn it off, and it still takes 5 minutes.
Well, nothing to be done because that's what I've got. I just pull stuff off the hob when I don't need the heat.
